The grapes harvest (from mid september to mid october)

It is a wonderful moment where excitation and febrility are mixed together. It is the ending of a year of work and care to vines and grapes. The method to decide when to harvest is to pick up grapes regularly in our different parcels so as to optimise the harvest day. We look for obtaining the alcoholic and phenolic maturities (matter, tanins, color that is to say the structure of the coming wines). We also have to consider the meteo broadcasts which could compromise a millenium at the very last moment. We customize every parcel every single year because our obsessional purpose it to harvest grapes at maturity with the best sanitary conditions leading to the best possible expression of the vines. It is definitely the basic postulate to elaborate great wines.
